Beverly's Carrot Cake (NR)
Makes one 9-inch, two-layer cake or two 8 and 1/2-inch loaf cakes.

Steps
CAKE
Mix sugar, oil, and eggs.
Add flour, salts, baking soda, and cinnamon.
Beat in carrots and nuts.
Grease and flour two nine-inch round pans, or two 8 and 1/2-inch loaf pans.
Bake at 325 degrees (F) for 60 to 80 minutes until cake tester comes out clean.
Cool in pans for 10 minutes, then invert on rack.
FROSTING
Mix cream cheese and butter.
Add sugar and vanilla.
Frost between layers and on top for a round cake, or frost tops for a loaf cake.

1 and 1/4 C vegetable oil
4 eggs
2 C flour
1 Tsp salt
2 Tsp baking soda
2 Tsp cinnamon
3 C shredded carrots
1 C chopped walnuts
FROSTING
4 oz. softened cream cheese
4 Tsb. softened butter
2 C confectioner's sugar
1 Tsp. vanilla
