Jane's Plain Chili Sauce
Makes four 1-pint jars

Steps
Scald, peel, seed, and chop tomatoes
Cook tomatoes for 15 minutes, thoroughly drain
Add onions and peppers
Cook covered for 1 and 1/2 hours
Add vinegar, sugar, salt, and cinnamon
Cook uncovered 3 and 1/2 hours, until liquid is mostly absorbed and turns somewhat dark
Can - 15 minutes processing time
Ingredients
One peck (12 lbs) tomatoes
9 small onions, chopped fine
6 peppers (3 red, 3 green) chopped fine
4 tbs salt
4 tsp cinnamon
2 C brown sugar (heaping)
2 C cider vinegar (heaping)
