Jane's Plain Chili Sauce

Makes four 1-pint jars

Jane's Plain Chili Sauce

Steps

  1. Scald, peel, seed, and chop tomatoes

  2. Cook tomatoes for 15 minutes, thoroughly drain

  3. Add onions and peppers

  4. Cook covered for 1 and 1/2 hours

  5. Add vinegar, sugar, salt, and cinnamon

  6. Cook uncovered 3 and 1/2 hours, until liquid is mostly absorbed and turns somewhat dark

  7. Can - 15 minutes processing time

Ingredients

  • One peck (12 lbs) tomatoes

  • 9 small onions, chopped fine

  • 6 peppers (3 red, 3 green) chopped fine

  • 4 tbs salt

  • 4 tsp cinnamon

  • 2 C brown sugar (heaping)

  • 2 C cider vinegar (heaping)
